It`s always a different experience when you go to city or to a country and stay with locals instead of hotels. You will discover a lot more spots, restaurants, parties and whatever apart from the tourist places. You will learn more about tradition and culture then if you do when you stay in a hotel with other tourists. I think thats the main reason to do couchsurfing.
