I've been living in Lake Atitlán for 2 years and have seen zero safety concerns. There are no protests or violence in any way. As far as I'm aware there have been some peaceful protests in Guatemala City and that's it. Lake Atitlán is one of the safest place at I've travelled to

nobody messes with the Atitlan golden goose. political issues are much the same as in US. demonstrations cre chasing politicians, not tourists.

Panajachel and other little villages are safe. Tourist are always welcome. Take care if you are at the road at the afternoon (rains, more way incidents). As other countries you need to take some care if you are traveling with professional equipment (big cameras, laptops or other devices). Enjoy ;-)
