Post em Essex

Hi all, my name is Daniel, I'm from Spain, I'm in love with the UK, I lived in Cambridge long time ago, and since then I visit the country again when I can (more than 20 visits now -only a few through CS-). On this occasion I'm spending a long weekend (Jun 10-13) somewhere relatively close to Stansted Airport, and I'm looking for a host in the area. I had thought of Saffron Walden, Thetford forest, Ely, Lavenham, or any other nice place in Essex, Hertfordshire or Cambridgeshire (I am open to suggestions). I'm interested in traditional towns, walks in the countryside, pub food, real ale (with moderation), folk music, nature, history, science and of course talk to people :-) Could you help me?
