Hiltl Sihlpost right at the main station (see tag) is a really good spot with only vegetarian and vegan options. Since it's a buffet-style restaurant you pay by weight. Really everything I've tried there was delicious. enjoy your stay!
Besides Hiltl, which is really a vegetarian restaurant chain (there are like 4 of them in town) there's also a nice place called Cafe Zahringer, where it's not completely vegetarian, but they make a point to have a lot of vegetarian options, and the "indie/home-made" (not sure I am using the correct words here..) type ambiance there is pretty neat too. I like the kefir drinks there, and they have nice beers and stuff, and also board games.. you find a map on https://zaehringer.ch/kontakt/ if you want to have lunch/dinner there I can be around!
Try Tibits. It's very close to OpernHaus in Sechseläutenplatz :)

oh forgot: this weekend is http://www.slowfood.ch/de/home/ there will definitively be a lot of meet and sausages but as well there is a lot of cheese and other typical alps specialities in faboulus quality. maybe well meet there.

Tibits is the fastest, Hiltl the oldest, Elle n'belle the coolest and Marktküche the best;-)

I'd recommend all the ones that were mentioned already, and I can add "roots" near mainstation Zürich HB, Hiltl Dachterrasse in Bahnhofstrasse, Neni near Europaallee, or the Lebanese Le Cèdre near Bellevue.
