Well I work at Asheville Brewing Company so I'm bias but I'd say there, green man, high-wire, and Highlands. New Belgium and Sierra Nevada are good but also gigantic. Wicked Weed isn't as good as it's hyped up to be in my opinion.

Each of these have a different vibe, Wedge Brewing, Burial Beer, Whistle Hop, & Brew Pump (not a brewery, but a pretty interesting bar/gas station (go after 5 & hit a food truck).
If you go to Asheville Brewing, hit the one on Merrimon (Pizza...Beer...and a Movie). Their Ninja Porter & Fire Escape are 2 solid choices.
