Depending on the region, you can have a little variations in your culinary adventure in each place you visit. Mie Aceh (Acehnese style noodles), Ayam tangkap (fried traditional free range chicken with assorted aromatic leaves), martabak aceh (egg omelette served with pickled shallot), kuah kameng (Acehnese style lamb curry), sate Matang (beef/lamb satay served with coarsely ground peanut sauce), bu gurih (aromatic rice cooked with coconut oil) are among the popular local dishes that you can find in almost all regions in Aceh. Other options are pretty regional. You can try kuah sie itek (duck curry) in regions along east coast, sie manok Samahani (chicken curry) and ruti selé Samahani (bread with egg custard) in Aceh Rayek District, or ikan depik (anchovy from lake Laut Tawar) in Takengon. Various sea fish dishes are also worth trying either in east or west coast regions. Don't forget to try Acehnese coffee too.
