Spain food trip

In june I am doing a food trip around Spain and will be in Castilla La-Mancha somewhere around the 21. june - 23. june. Does anyone have tips on what food that is typical for this region that i should try? And if anyone would like to show me around or host me, I would be delighted. Looking forard to hear about good food :)
