I often recommend Karakoy because you can easily reach Sultanahmet by tram and many places by walking. You are close to the ferries to go to the Asian side too. https://shoyusugar.com/istanbul/

My personal favorite is Kadikoy on the Asian side though - you can take the ferry each day as part of your sightseeing. There are shuttle buses from both airports to Kadikoy as well or direct connection by metro to Sabiha Gokcen airport.
