If you are still in Neuchâtel, try Eateco close to the train station (north side) juste in front of the bridge.
They are really nice and the food is very good.

Ananda, indian cuisine, ot’s vegetarian but you can get vegan dishes.
Many restaurants nowadays offer a vegan / vegetarian dish.
