May is nice in CT - go hike at White Memorial in Litchfield. There are TONS of trails all over the state (Blue Blazed trails , Appalachian Trail out in the western part of the state)
People's forest in Barkhamsted - Farmington River (rafting , fishing)
Bantam Lake (canoeing or kayaking)
Lake Waramaug in Washington , bike around the lake , antiquing in NEw Preston, lunch at White Horse Tavern
Ferry to eastern LI from New London is nice, Orient Point State Park
Casinos in eastern CT (Mohegan Sun and Foxwoods, check concert schedule)
Norfolk and Hartford - Infinity Theater, great concerts
I don't know what part of CT you'll be in but I can give more suggestions if you need.

Hi Tom, Connecticut is a big state. I am in Hartford/Bloomfield. Hiking in May is fun. Hartford has a Science Museum and an art museum and there is a dinosaur fossil remains park nearby. Mark Twain lived in Hartford and his home is a museum here. Harriet Beecher Stowe (Uncle Tom's Cabin) also had a home which is open to the public. It was part of the underground railroad. Legos were originally manufactured in CT and their administrative offices have a museum (legos are made in CHina now) Tic Tacs has a factory here. COlt guns were manufactured in hartford. Other parts of the state have a coast line with beeches (May is a bit early but nice for walks) New Haven is home to Yale which is a nice campus to see. Many other things in New Haven which I know nothing about. If you need more information let us know where you will be staying, what you will be doing and what your interests are and others may be able to fill you in better. I bike around a lot and May is usually great for that. Good luck, enjoy your stay.
It depends on what part of the state you will be. Like Judi said, there are many places to hike (Sleeping Giant is a favorite), and Litchfield County is beautiful. Many cities, like West Hartford, New Haven and Norwalk to name a few, have a number of nice restaurants and bars. There are growing number of great microbreweries that have tours and tasting rooms (e.g., Two Roads in Stratford), in addition to several wineries and distilleries. Meetup.com and Facebook often advertise special events throughout the state and are worth checking. And if you're staying anywhere near I-95, in New Haven or further south, you have easy access to NYC via the Metro North commuter rail.
If you like architecture (as I do), Grace Farms in New Canaan is quite interesting. In New Haven, there is Ingalls Rink (designed by Eero Saarinen and referred to as the Yale Whale), the Thomas E. Golden Jr. Center, and many others. Yale's campus is very nice, and as Alton mentioned, there are several nice restaurants and bars in New Haven (I recommend Bar Pizza or Louie's Lunch). Many places have dance communities for various styles. There are great swing dancing groups in New Haven, Middletown, and Hartford, to name a few.

Hi Tom,
That's possibly the best time to be in CT, so I'm glad you're joining us then! It looks like you've already gotten some great suggestions, but I'd really encourage you to spend a good amount of time exploring Litchfield County, provided you've got a car. Go to Kent Falls, or Salisbury to explore lake country. Bear Mountain is gorgeous, and partly falls on the Appalachian Trial.
But also, come visit New Haven! We have amazing restaurants, tons of shops and free museums, and spots to walk around. Plenty of outdoor bars to grab a beer or cocktail if the weather's nice. Walk around East Rock neighborhood, and treat yourself to a sandwich from Nica's Market while you people watch.

For epic ice cream trips, try Milkcraft in Fairfield and Arethusa in New Haven. Also if abandoned mental hospitals intrigue you, go to Fairfield Hills in Newtown. There's lots of walking trails and creepy buildings to gaze at.
Agreed on the hiking, but be sure to be tick safe. Deer ticks are very very small, and Lye disease sucks really really bad.
