I'm not sure about souvenirs, it depends what kind of souvenirs you are looking for. As for flea markets... In Raleigh, there's the State Farmers Market which has a bunch of locally produced (mostly food) goods. There is also a flea market at the NC State Fairgrounds. You usually need to go on a Saturday morning, that's when the most people are there.

Not much in the way of souvenirs here ... mostly the college sports teams. Franklin Street here in Chapel Hill (UNC Tarheels) or Ninth Street in Durham (Duke Devils) have little shops.

There is an arts & crafts market Sunday from 12-4pm at Durham Cebtral Park that will likely have North Carolina souvenirs. You can also find things at Morgan Imports in Durham and probably at the UNC or NC State student stores.
