I went scuba-diving in Turkey once and since then haven't been able to stop thinking about it.
The northern lights in Iceland also amaze me every time, no matter how many times I've seen them.

I know three languages fluently so I can teach you some Icelandic or some Russian!
I was also a sushi-chef for good five years in a very nice restaurant in downtown Reykjavík, so if you want to have a sushi night, that can be arranged! If there isn't time, I could at least give you some helpful tips!
