ABOUT ME

I’m half-English and half-French, back in Amsterdam after five years in Barcelona. This mix of cultures has given me an appreciation for absurd British humour, stinky cheese, Dutch pragmatism and hard-to-find tapas bars.

To make a perfect poached egg first break the egg into a cup. Fill a small saucepan with water and add a teaspoon of vinegar. Bring it to a near-boil (simmering but not bubbling). Slowly drop the cup into the water so that the water comes in and the egg swirls out. Cook for around 3 minutes (never allowing the water to boil) and drain. Serve with black pepper, salt and tabasco.
