Planning a trip in January: Colorado/Utah/Arizona (will be traveling with my boyfriend)

Currently in graduate school for occupational therapy. Planning low-budget trips on my school breaks to recharge and get away from my day-to-day commute into the city. I'm a pretty laid-back person with a positive outlook on life. I'm a quiet person by nature; I'd rather be an observer and a listener for others. My parents are from Peru, and I've taken many trips there for family and to travel. If you ever need recommendations or want to know anything about Peru feel free to ask!
