Rich Vegan Chocolate Cake
Ingredients:
¾ cup whole wheat flour
1 cup all purpose flour
2 tsp baking powder
1 tsp baking soda
½ tsp salt
¾ cup cocoa powder
1 cup plain soy milk
½ cup canola oil (or veg oil)
1 ½ cups pure maple syrup
1 tsp apple cider vinegar
2 tsp vanilla extract
Method:
1. Preheat oven to 350°F (180°C) and grease a 9 inch cake tin (or whatever you have!)
2. In a large bowl sift together flours, baking powder, baking soda and salt.
3. In a saucepan, heat the soy milk on a low-medium heat. When it is slightly bubbling, add the cocoa powder and whisk well until it is dissolved. Remove from the heat.
4. In another bowl, combine the other liquid ingredients and whisk well. Add the cocoa mixture and combine. Add the wet ingredients to the dry.
5. Pour batter into prepared pan, bake for 25 minutes until a toothpick or knife comes out clean. Let cool completely and frost as you like!
Vegan Chocolate Frosting
Ingredients:
½ cup vegan margarine
2 cups vegan powdered sugar
1 tbsp vanilla extract
2 tbsp soy milk
⅓ cup cocoa powder (or more)
A dash of salt
Method:
1. Soften the vegan margarine (just take it out the fridge while baking the cake)
2. Using an electric mixer, cream the sugar into the softened margarine. Then add the vanilla extract, soy milk, cocoa powder and salt. If it is too thick, add a little more soy milk, if too thin add a little more sugar. Continue to mix until light and fluffy.
3. Frost your cake!
