Uighur food is the greatest cuisine you've never heard of. Korea has the world's very best fried Chicken. I could live off charcuterie and cheese happily but maybe not for very long. I'm very interested in high quality food grown and crafted with care. There's a few excellent Farmer's markets and international grocery stores in the Raleigh area!
