When I'm home in Zambia, my perfect day involves a massive, delicious plate of comfort food. Went to some nearby lake Tangy to get freshly caught fish, a huge helping of pap (nsima), and a side of rape (the super-nutritious leafy green—yes, that’s what we call it!), and I'm in heaven.
