I think on couchsurfing you have a chance to know people you probrably will not meet if you are travelling on tradicional way. Besides that, the host may show you the city of a diferent angle most turists see. You can learn more about the culture of the place you are in a couple days of couchsurfing than in one month staying in a hotel or hostel.
